Ingredients

  • 2 ripe mangos peeled and diced smaller than bite-sized pieces
  • Lemon juice from one whole lemon or fresh lime juice
  • 1 bundle of fresh cilantro chopped and stems removed
  • 2 teaspoons kosher salt
  • 2 vine ripe tomatoes diced
  • ¾ cup red onion diced
  • 2 jalapenos diced seeds and veins removed for a milder flavor
  • 2 garlic cloves diced or mashed

Instructions

  • On a cutting board, dice the mangos, cilantro (removing the stems), tomatoes, red onion, and jalapenos.
  • Make sure all the fruit is diced down to about a ¼ inch to no more than a half of an inch in size.
  • This will help keep the flavor consistent in every bite.
  • In a medium bowl, combine mango, lemon juice or lime juice, cilantro, tomatoes, jalapenos, mashed garlic, and salt.
  • Mix all the ingredients together until they are thoroughly incorporated.
  • Allow the salsa to sit for about 15 minutes until the juices start to render.
  • Place in a small bowl to have with tostadas or with your delicious fish tacos!
  • Happy Taco Tuesday!
