Feed your sourdough starter the night before you plan to make this recipe.

Measure out flour, active sourdough starter, water, and salt into a bowl.

Thoroughly mix all ingredients until they are completely combined.

Cover the bowl with a damp towel or plastic wrap.

Perform 3 sets of stretch and folds, 30 minutes apart.

Step

Cover with a damp towel or plastic wrap and allow to rise at room temperature until double in size.

Step

Remove sourdough from bowl and begin to shape it into a ball to add surface tension.

Step

Shape the sourdough into the shape of your proofing bowl or banneton.

Step

Place proofing basket or banneton with dough in it, into the fridge for an overnight rise.

Step

Score dough and bake on a lined cookie sheet on the middle rack of oven, with a baking sheet filled with water on the rack below it.

Bake at 475 degrees for 35 minutes. Remove and allow to cool completely before enjoying!
