Ingredients

  • 2 cups chunky all natural peanut butter
  • ¾ cup honey
  • 2 large eggs
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup dark chocolate chips

Instructions

  • Preheat your oven to 350 degrees.
  • Prepare an 8 X 8 oven safe baking dish by buttering the sides and the bottom, or by placing parchment paper in it.
  • Set the dish aside to prepare the flourless cookies.
  • In a large bowl measure out chunky peanut butter, honey, baking powder, and salt.
  • Stir peanut butter mixture with a wood spoon or mix in a stand mixer, until all the ingredients are thoroughly incorporated.
  • In a separate bowl beat the two eggs well.
  • Add the whisked eggs to the smooth peanut butter mixture.
  • Thoroughly incorporate the wet ingredients.
  • Stir in the dark chocolate chips. Pour the batter into the prepared baking dish.
  • Place the dish into a preheated oven.
  • Bake for 25 minutes, until golden brown on top. Do not over cook as they will lose their gooeyness!
  • After the Gluten Free Peanut Butter Cookies have baked, place them on a wire rack until they are at room temperature.
  • Cut into squares and serve!
