These are the best flourless gluten free peanut butter bars! They are full of flavor and packed with a decadent chewy gooeyness in every single bite. It is a struggle not to eat the whole batch! This is truly the peanut butter lovers bars. With only a few simple ingredients you will have yourself the best peanut butter cookie bars!
Peanut butter is a big staple in our house! I always have a couple of jars of natural peanut butter on hand. It always seems to be the perfect healthy remedy to the afternoon munchies. The whole family usually snacks on peanut butter with sliced apples or in a raw milk smoothie, until I discovered our favorite cookies–flourless peanut butter cookie bars! It’s hard to believe that these chewy cookies do not have any all purpose flour, which makes them a perfect treat for someone with celiacs disease or someone just following a gluten-free diet.
I used Smuckers Natural Peanut Butter in this recipe, which only contains peanuts and salt. I prefer to stick with labels that only contain wholesome ingredients, ones that I can literally pull out of my pantry. I find that doing this is the healthiest choice for me and my family. The peanut butter spreads are full of added sugars and hydrogenated oils, among other ingredients.
I highly encourage everyone to take the time to read all labels before purchasing packaged items. This could be the gateway to you and your family’s health and longevity. And may even help better your quality of life! Yes, it is more expensive, but the cheaper things come with their own price tag too. And it gives me peace of mind feeding my kids nourishing, from scratch whole foods.
Flourless Peanut Butter Cookie Bars Recipe Substitutes
I love all the nutritional benefits of honey so I use it in all the baked goods that I can. I also find that the honey and the peanut butter complete each other so well! However, if you have found yourself in a honey shortage, this would be tragic, it can be substituted for maple syrup, coconut sugar, white sugar or brown sugar.
Yes! You can also make this recipe vegan! You would do this by replacing the honey with maple syrup or your favorite sugar, and you can replace the large egg with egg replacer, a chia egg, or a flax egg.
The crunchy peanut butter can be substituted with creamy peanut butter, but for best results, I would definitely stick with crunchy peanut butter! The crunch gives the perfect texture to these gooey bars.
Feel free to replace the dark chocolate chips with milk chocolate, chocolate chunks, or even peanut butter chips to add more peanut butter flavor! Although, you might want to consider dialing back the honey a bit (by a tablespoon or two), as this treat may become too sweet!
For a more cakey peanut butter bar you can add another egg.
These flourless peanut butter bars can be Keto friendly! Just swap out the honey with your favorite sugar substitute! I have used monk fruit sweetener in a 1:1 ratio and they were delicious! I also added a 1/2 teaspoon of vanilla to add to the depth of flavor that the sugar was lacking. I suggest powdering the monk fruit sweeter by placing it into a blender for a few seconds. I have noticed that this helps cut the “cooling” effect of the sugar when it is in the baked good.
What You Will Need for these Gluten-Free Cookies
Large mixing bowl
Stand mixer or a wooden spoon
Cooling rack
Main Ingredients For the Gluten-Free Peanut Butter Cookies (Bars)
2 cups chunky all natural peanut butter
3/4 cup honey
2 large eggs
1/4 teaspoon salt
1 teaspoon baking soda
1/2 cup dark chocolate chips
Instructions:
Preheat your oven to 350 degrees.
Prepare an 8 X 8 oven safe baking dish by buttering the sides and the bottom, or by placing parchment paper in it.
Set the dish aside to prepare the flourless cookies.
In a large bowl measure out chunky peanut butter, honey, baking powder, and salt.
Stir the peanut butter mixture with a wood spoon or mix in a stand mixer, until all the ingredients are thoroughly incorporated.
In a separate bowl beat the two eggs well.
Add the whisked eggs to the smooth peanut butter mixture.
Thoroughly incorporate the wet ingredients.
Stir in the dark chocolate chips. Pour the batter into the prepared baking dish.
Place the dish into a preheated oven.
Bake for 25 minutes, until golden brown on top. Do not over cook as they will lose their gooeyness!
After the Gluten Free Peanut Butter Cookie Bars have baked, place them on a wire rack until they are at room temperature.
Cut into squares and serve!
