The Many Health Benefits Of Eggs On A Keto Diet

Are eggs keto friendly? Good news–they are! Not only are they a keto and low-carb diets top qualifier with less than 1 gram of carbs each (which I would completely omit if I were counting), but they have many health benefits too! Not to mention there are so many different ways you can work with them! Eggs are the foundation of some of my most delicious keto recipes. That’s right, in most cases when I am looking to cook or bake something, I look to the egg my friend. Before I go on gushing about the egg being our staple food, let’s crack it.

Nutrition Facts About The Beneficial Egg

  • Most people believe that the egg whites are the only part that contains protein. This is NOT true! About 43% of the eggs protein is in the yolk! 
  • A large egg contains about 78 calories, less than 1 gram of carbs, 6 grams of protein, and 5 grams of fat. Making them perfect for the ketogenic diet or if you are just watching your calorie intake. The best part is, they’ll help to keep your blood sugar in check!
  • All of the vitamins and the essential nutrients are found in the egg yolks.
  • According to the Cleveland Clinic, they are one of the best sources of essential amino acids.
  • Whole eggs are a great source of water soluble B vitamins such as: B2, B5, and B12, as well as fat soluble vitamins such as: vitamins A, E, D, K, and Selenium.  
  • Almost every mineral that the body requires to function properly can be found in the whole egg.
  • Let’s not forget about the shell! Say what? That’s right, nothing goes to waste! ½ teaspoon of powdered eggshell is said to give you 90% RDA for calcium. This could be the best way to reach your daily value of calcium especially if you are lactose intolerant!

Did you know that the egg is a seasonal thing? I learned that the first year we had chickens– Surprised me! When the days grow colder and darker the hens will usually take a break for a couple of months. They will still lay, but only a couple times a week. This is usually why egg prices go up a bit during winter. You could add light to the coop to try to trick your hens into laying but most farmers opt out of doing this to give their ladies a well deserved break! I agree with that, Lord knows I could use a break too!

The Best Time To Stock Up On Healthy Eggs

Springtime is a great time to get fresh eggs from a farmstand or a farmers market. They are usually in abundance since the hens have started laying full time again. They will also be the freshest eggs you’ll find, other than if you have some in your backyard. The eggs on the shelf are not as fresh, in fact, they can be up to two months old! You may pay a buck or two more with a farmer but it is well worth it! The longer something sits on a shelf, the less nutritional value it has.

Most grocery store eggs come from chickens that are on top of each other and never see the light of day! They are lower in vitamin D and omega 3’s since they aren’t in the sun and can’t scratch for bugs. Eggs that are found at a farmstand are most likely from chickens that are pasture raised, so the yolks will be more nutritionally dense and full of healthy fats! If this has you curious, try comparing a store bought yolk to that of a farmer’s egg. You may be very surprised!
