Raw Fermented Sauerkraut

HOW TO MAKE

 Large bowl   Cutting board   Knife  Cabbage  Sea salt  Quart jar    Tamper or Wooden  spoon

INGREDIENTS  

Slice cabbage into thin slices and place into a bowl. Add the salt to the shredded cabbage and begin to squeeze the cabbage.

STEP 1

Continue squeezing the shredded cabbage until the liquid from the cabbage renders.

STEP 2

Place the shredded cabbage and its juices in a quart size mason jar. Using a tamper or spoon, press down until it is submerged under the brine.

STEP 3

Place a fermentation weight on the cabbage to hold it under the brine during the fermentation period.

STEP 4

Place a fermentation burping lid and ring on the jar. Store at room temperature.

STEP 5

Allow 2 to 3 weeks for the raw sauerkraut to work its magic!   Serve and enjoy!
