For those busy weeknights, it can be thrown into a slow cooker, cooked on low, and enjoyed when you walk through the door! Substitutions for This Low Carb Bacon Cheeseburger Soup Recipe


If you prefer a thicker soup, then cream cheese would be a nice addition. I would temper it before placing it into the soup. In this case you would remove a cup of hot soup, place it into a bowl, add chopped up cream cheese to it, and mix it until the cream cheese melts down. Then, put it back into your soup and mix it around. If you like creamy soups, then mix in a dollop of sour cream!

If you miss the texture of a starch in your soup, then cauliflower rice is a must try! I have found that cauliflower mimics rice pretty well and will give you a chunky soup that is delicious! The ground beef can be substituted for ground turkey for a leaner soup. We like this soup with a variety of cheeses, not just cheddar (some like pepper jack in it!), so if you prefer a different cheese then it will still taste great!

What You Will Need for Low-Carb Cheeseburger Soup

Large pot or dutch oven (or a crock pot if you prefer to slow cook this)
A skillet (to cook the ground beef in)

Ingredients for Low Carb Cheeseburger Soup Recipe

8 cups beef stock, beef broth or bone broth (I use homemade bone broth)
5 ounces sharp cheddar cheese grated ( 1/2 ounce per bowl, extra cheese if you would like)
4 lbs ground beef (90% lean)
10 strips of bacon (one chopped per bowl)
1 14.5 ounce can of diced tomatoes
5 carrots chopped
1/2 large onion chopped
16 ounces frozen green beans
2 garlic cloves diced
2 teaspoons dried oregano
1 tablespoon basil
1 tablespoon thyme 
1/4 cups heavy cream
Salt to taste

Easy Bacon Cheeseburger Soup Recipe (Keto + Low Carb)


Cook bacon on medium high heat in a stock pot. One bacon is crispy, remove and place to the side. The bacon will be sprinkled on the final dish once ready to serve, so it does not get soggy.

Turn stove down to medium heat. 

Remove all but two tablespoons of bacon grease.

Add onions, carrots, garlic. Sautee the vegetables until soft. Stiring occasionally.

In a seperate skillet, add the ground beef and cook on medium high heat until cooked through.

Once meat is cooked and vegetables are tender, place the ground beef in the stockpot with the cooked vegetables.

Add beef stock to the pot of ground beef and vegetables. 

Add the can of diced tomatoes.

Add the thyme, oregano, and basil.

Add salt to taste.

Turn heat back up to medium high heat and allow the soup to come to a rolling boil. 

Add the green beans.

Place the top on the pot and allow the soup to boil until the green been are soft. This usually takes about 10 minutes.

While the green beans are cooking in the soup, grate your cheese and chop your bacon. You are going to want about 1/2 oz of cheese per bowl and 1 chopped bacon per bowl.

Once the green beans are softened, taste your soup again and make sure it has enough salt.

Place about 2 cups of soup in a bowl. Add the cheese and garnish with the bacon and chives. Serve immediately!

This can be stored in an airtight container for 3-4 days.
